Coz my fireplace is sealed, but I still like to listen to it cracking

I don't know what kind cracks the most but the worst one I've seen is
red ceder. A closed fireplace is recomended if you burn much of this.

In these parts (eastern US) the wood that crackles and pops the most
when burned is Sassafras. It not only makes a lot of noise but it often
shoots pieces of burning embers out into the room if it is being burned
in a fireplace.

Try Sassafras.
Sassafras stinks when it burns. (May not be a problem in a sealed fireplace,
but I sure wouldn't do that in an open fireplace.)

Sycamore has plenty of snap, crackle, and pop, and doesn't stink.

I've burned Sassafras and did detect a very slight odor but nothing that
would stop me from burning it. I just did not like the embers shooting
all over the room, some up to more than 10 feet from the fireplace!

Softwoods are generally best for this - stuff with lots of pitch. Try pine.

*Bad* idea. Burning resinous woods forms creosote, which deposits on the
inside of the chimney, leading to risk of chimney fire.

Nah. Burn a hot fire, clean the chimney once a year, and creosote
will not be a problem.

If you don't do that, you're asking for trouble, regardless of what
wood you burn.

Willow will spit like crazy. It will throw small embers out onto your rug
to burn either holes into it or just burn the whole house down. That should
fill your criteria nicely.
